Grandma’s recipe – chicken noodle soup

This versatile soup can be made with or without the evaporated milk, depending on your taste-buds, and can be frozen ahead for an easy reheat meal just when you need it.
½ BBQ cooked BBQ chicken
1L readymade chicken stock
1 medium onion, chopped
1pkt Chicken 2minute noodles
1pkt Chicken supreme soup mix (or similar)
1 large carrot, grated
1 large stick celery, chopped
1 can evaporated milk (optional)
1/3 cup chopped parsley
S&P to taste
Place stock and water in a large saucepan. Add soup mix, noodles (including seasoning sachet), onion and celery. Boil 5 minutes.
Add flour (mixed in a little water to form a smooth paste), carrot and chicken meat. Boil for further 15 minutes or until vegetables are tender.
Lower heat and add evaporated milk, parsley and season to taste with salt and pepper. Reheat slowly over low temperature to avoid curdling.
