
Homemade Lemon Cordial
The sun is starting to peek through the clouds of Winter and Spring has already made an appearance.
The warmer days we’ve enjoyed recently are perfect for a cool drink to soothe parched throats…and it’s only going to get warmer as Summer approaches.
Now is a great time to experiment with making your own lemon cordial for those dry, hot days ahead. Great for a picnic outing with friends, or just at home around the kitchen table. And what better way to use in-season lemons than in a drink you can enjoy as the weather warms up?
The Recipe
Ingredients:
4 cups / 880g Sugar
5 cups / 1250g Boiling Water
Juice of 6 lemons
Grated rind of 2 lemons
1 tsp Citric Acid
1 tsp Epsom Salts
Method:
Dissolve the sugar in the water. Add remaining ingredients and combine. Leave overnight for the flavour to come out of the rind. Strain and bottle. Keep refrigerated.
This makes a lovely lemon concentrate that keeps for a long time in the fridge. Add to iced water for a good old fashioned drink, or spritz it up with soda water for a refreshing bubbly.
